Peppermint icing

The amounts in this recipe hold true whether you are using dairy cream cheese and butter or vegan options, so work with whatever you'd like to eat. This icing recipe goes beautifully on a chocolate cupcake or in between two soft cookies like a peppermint sandwich. 

4 oz vegan cream cheese (Kind Cultures is my go-to)
4 oz softened vegan butter (I like Forager) 
4 cups powdered sugar
1 TBSP HBFG Peppermint extract
